Brown rice is produced when only the outermost layer of the rice is removed and is therefore like a whole grain. Many of the nutrients that are destroyed by the polishing that converts brown rice into white rice are hence preserved, such as cancer-fighting selenium, manganese, magnesium, Vitamins B1, B3 and B6, iron and essential fatty acids. It is also a rich source of dietary fibre essential for good health. The oil in the brown rice is considered helpful in lowering cholesterol.
